Bacon Cheddar Biscuits

  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1/4 tsp baking soda
  • 2 tsp granulated sugar
  • 3/4 teaspoon salt
  • 6 Tbsp cold unsalted butter, cured
  • 3/4 cup Wildcat Mountain Cheddar cheese
  • 1/2 cup crumbled bacon (6-7 slices)
  • 3/4 cup cold milk (buttermilk works best but you can sub in regular milk)

Preheat the oven to 450°F and grease or line large baking sheet. Whisk together your flour, baking powder, baking soda, sugar, and salt until  combined. Add the cubed cold butter and cut into the dry ingredients using a pastry cutter or food processor. Then, whisk in the shredded cheese and crumbled bacon. Pour the cold milk into the mixture and gently work it together until the dough starts to form. Place dough onto a lightly floured surface and gently work it together with your hands. Pat into a rectangle and fold three times. Flip the dough, gather scrubs and repeat the previous step again. Do this two more times and then roll the dough out to 1/2 thickness. Using a biscuit cutter or cup, cut out your biscuits.Place on the baking sheet and make sure they are not touching. Bake for 15-20 minutes until golden. Let cool and enjoy!
